The only way to make a sandwich!

This is the cookie cake we had this past weekend. I used white whole wheat flour, but All Purpose flour works fine.

Peanut Butter Chocolate Chip Cookie Cake

1 stick butter (2 sticks if using margarine)
1 c sugar
2 eggs
1 t baking soda
1 t salt
1 T vanilla
2 c white whole wheat flour
2 c chocolate chips
1 c peanut butter (this is a guess, I usually just spread it on)

Heat oven to 350. Cream butter and sugar together. Add eggs one at a time, letting the mixture blend for each one. Add baking soda, salt, and vanilla. Add flour, mix until blended and let rest for 5 minutes. (The whole wheat flour needs more time to absorb the wet ingredients than normal all purpose flour.) Add the chocolate chips. Grease a 8-in cake pan and press half of the cookie dough into the bottom of the pan. Spread the peanut butter (use more or less peanut butter as you need to cover the bottom layer) on the cookie dough. Press the other half of the cookie dough on top of the peanut butter. Bake for 20-25 minutes.
